Main Dishes
Egg Rolls

4 cups shredded raw cabbage
1/2 cup chopped onions
1/2 cup celery
1 cup diced cooked chicken
1 cup cooked hamburg
1/2 tsp. pepper
2 tsp. salt
1 tbsp. soya sauce
1 tbsp. peanut oil
1/2 tsp. m.s.g. spice
egg roll covers (dough)

Combine vegetables in a deep bowl with salt. Let stand 15 minutes and drain. Add other ingredients. Brush edges of dough with beaten eggs. Put approximately 2 tbsp. of filling in dough. Deep fry at 375 until golden brown. Egg rolls may be frozen. To reheat, place on cookie sheet and bake at 350 for 20 minutes.

Seafood Cr�pes

Filling

1/4 cup butter
1 cup baby shrimps
1 cup small scallops
1 cup crab meat (cooked)
2 cups grated cheddar cheese (optional)

Preheat oven at 350�. Heat butter in saucepan. Add scallops and saut�. Add shrimp and crabmeat. Simmer for 3 minutes. Stir in sauce and simmer for 5 minutes. Spoon 3 tbsp. of mixture into each cr�pe and roll. Place cr�pe in greased casserole dish. Sprinkle with grated cheddar cheese. Bake in oven for 15 minutes.

Sauce

2 tbsp. butter
1 tbsp flour
1/2 cup chicken bouillon
� cup heavy cream
1/4 tsp. salt
1/4 tsp. pepper
1/4 cup grated parmasan cheese (optional)

In a saucepan, melt butter. Add the flour and stir into a paste. Add chicken stock, cream, and seasoning. Simmer while stirring until thick.

Cr�pes

3 eggs
1/4 tsp. salt

1cup milk
3/4 cup flour

3 tbsp. butter

With mixmaster, whip eggs until very light. Add salt and milk, and fold in flour a little at a time. Lightly grease skillet with a little butter. Pour in enough batter to cover bottom of pan. Rotate pan to spread the batter into thin layer. Grill the cr�pe until brown. Then turn over and grill 30 seconds and put in plate. (Put wax paper between cr�pes).

Spaghetti au Gratin

1 onion (chopped)
1 green pepper (chopped)
1 lb. hamburg
1 can tomato soup
1can cream of mushroom soup
1 can water
salt & pepper to taste
grated cheddar cheese
spaghetti

Cook onions and green pepper until tender and set aside. In same skillet, cook hamburg with salt and pepper. Then, add onions and green pepper, tomato soup, cream of mushroom soup, and water. Mix well. Put everything in 9�x13� casserole dish.

Next, cook spaghetti and spread on top of meat mixture. Top with cheddar cheese.

Cook in 325� to 350� oven for approximately 45 minutes or until cheese is goldenbrown.

Donair

5 lbs. hamburg
1 tsp. pepper
1 tsp. cayenne pepper
1 tsp. oragano
1/4 cup M.S.G. spice
1 cup bread crumbs
3 tsp. paprika
2 tsp. onion powder
salt to taste (1 tsp.)
1/2 tsp. garlic powder

Put in large bowl. Mix well with fingers. Kneed like you would bread. Shape into 2 balls. Press and tap each balls until firly packed (hard and solid ). Put on racks, then put pan underneath for drippings. Bake at 300 for 2 1/2 hours.

Sauce

1/2 cup of very, very cold carnation milk. ( I put it in freezer for a few minutes, but keep an eye on it so it don't freeze).

almost 1/2 cup white sugar
2 tsp. vinegar
1/2 tsp. garlic salt

Whip till it thickens. Store in refridgerator. When ready to re-use, you might have to beat a bit again.

Meat Balls

2 lbs. ground beef
2 cups cracker crumbs
1 tsp. salt
1 cup milk
2 eggs
minced onion

Shape in 1" balls

Sauce

3/4 cup vinegar
1 tbsp. dry mustard
1/4 cup ketchup
1-1 1/2 cups brown sugar
3/4 cup water
onion cut fine

Pour sauce over meat balls in casserole dish.
Bake at 350 for 40 to 60 minutes (covered)

Spaghetti Sauce

Lightly brown 2 lbs. hamburg and 1 large chopped onion.
In large pot, melt 2 tbsp. shortening.
Then add:
1- 13oz can tomato paste (or 2 cans of 6 oz.)
2 cups tomato juice or more if necessary
1 can sliced mushrooms

Gradually add these spices to your own taste:
garlic powder
celery salt
2 tsp. salt
1 tsp. chilli powder
1 tsp. cayenne pepper
1 tsp. curry powder
add 1/2 green pepper(diced)

Simmer about 4 to 6 hours. When sauce becomes thick, add more tomato juice.

Deserts
Mom's Butterscotch Pie (Yummy!!!)

3 cups milk
2 cups brown sugar
3/4 cup flour
1/4 tsp. salt
4 egg yolks (beaten)
4 tbsp. butter
1 tbsp. vanilla

Heat milk in saucepan until it smokes (do not boil).
Mix together brown sugar, flour, and salt real well, then add to milk. Heat until it starts to thicken then add the egg yolks.
Finally, add butter & vanilla. Pour into 2 cooked pie shells. Top with meringue.

Melting Moments

3/4 cup brown sugar
1 cup shortening
1 egg
2 cups flour
1tsp. baking soda
1 tsp. vanilla
dash of salt

Cream sugar and shortening, then add egg and vanilla.
Sift dry ingredients and add to first mixture. Roll ball then press with fork. Bake at 400 for 10 to 12 minutes.
